Sunrise Texas Chili
1 pound smoked grilled steak, sliced in thumbnail pieces
6 slices cooked, chopped bacon 3 cans chopped whole tomatoes 2 cans dark kidney beans 1 chopped onion 4 minced garlic cloves 1 roasted Mexican poblano pepper, chopped 1 cup red wine 1/2 cup Worcestershire sauce 1 teaspoon dry mustard 1 teaspoon celery seed 1 teaspoon paprika 1 teaspoon cayenne pepper 1 teaspoon cumin 1 teaspoon sugar 3 tablespoons chili powder 2 whole cloves 1 bay leaf In a pan, put chopped bacon, onion, garlic and Poblano pepper. Cook 3 minutes. Add red wine and Worcestershire sauce. Cook 10 minutes. Add dry mustard, celery seed, paprika, cayenne pepper, cumin, sugar, chili powder, cloves and bay leaf. Cook 10 minutes. Add smoked grilled steak and chopped bacon. Simmer 1 hour. Note: It is recommended that steak be smoked with apple wood chips. |
